Mouthwatering Easy Cheesy Eggplant Casserole

It was so much easier that I never made traditional layered lasagne again, and the experience has led to a number of similar bakes with Italian-style flavors. One is my Easy Cheesy Eggplant Casserole. Although there are just two of us at home now, I still like to prepare a full casserole of it (6-8 servings) so there are plenty of leftovers to reheat in t
