Ways to use leftover eggnog

Laura Young ECB Publishing, Inc. Eggnog shopping for me seems to be a boom or bust situation. Either it's all sold out or the only quantities left are way more than our little household needs. I buy a half-gallon carton anyway, lugging the heavenly concoction home even though I know a little bit of eggnog goes a long, long way. Sure enough, after we've had our fill of sipping the richly flavored holiday drink, the still-heavy carton is taking up precious space, fighting for its place in the fridge among all the other festive leftovers. Luckily, eggnog is pretty versatile as leftovers go, and easy to use up in lots of other recipes. The first thing I did was make our weekly pancakes wit
